Blueberry Muffins

Ingredients:
- 2 eggs
- ½ cup of milk
- ¼ cup of canola oil
- 2 cups of flour
- ½ cup of sugar
- ¼ teaspoon of salt
- 1 Tablespoon of baking powder
- 1 ½ cups of blueberries, fresh or frozen
Directions:
- Beat together eggs, milk, and oil.
Stir in flour, sugar, salt, and baking powder.
Add all the blueberries, and mix together. - Pour into greased muffin pan and bake at 400 degrees F, for 20 minutes.
Yield: Makes 12 muffins

I agree, Scott! When it’s berry picking season here, I put several bags aside for later use. But, I have to admit, they don’t last long because everybody in my household loves them! Glad you liked the recipe…simple and satisfying!!
