Blueberry Muffins

Ingredients:

  • 2 eggs
  • ½ cup of milk
  • ¼ cup of canola oil
  • 2 cups of flour
  • ½ cup of sugar
  • ¼ teaspoon of salt
  • 1 Tablespoon of baking powder
  • 1 ½ cups of blueberries, fresh or frozen
  • Directions:

  • Beat together eggs, milk, and oil. Stir in flour, sugar, salt, and baking powder. Add all the blueberries, and mix together.
  • Pour into greased muffin pan and bake at 400 degrees F, for 20 minutes.
  • Makes 12 muffins

      I agree, Scott! When it’s berry picking season here, I put several bags aside for later use. But, I have to admit, they don’t last long because everybody in my household loves them! Glad you liked the recipe…simple and satisfying!!
