I'm personally pleased that you just named two in your area. The one closest to me of which I'm aware is a cattle ranch about 150 miles away called YU Ranch. They raise Longhorn cattle on an all-grass/forage diet and are returning native prairie grasses to their pastures. It's not a mixed farm like Polyface but a wonderful program that just happens to turn out great tasting artisan quality meat.
