Less Talking, More Cooking

Early Spring recipes from the New Jersey shore

Early April is a tough time of year here in New Jersey for produce, unless we are experiencing unseasonably warm temperatures you really won’t see a substantial assortment of local spring vegetables until May or even June. If you are lucky you may have a produce market in your neighborhood or know an ambitious home gardener who may have some early asparagus or fresh spinach just ready for the picking. One great thing about living in such close proximity to the Atlantic Ocean and having a brother in law who is a fisherman on a scallop boat is that I get more than my fair share of fresh fish and seafood. The fishing season has officially kicked off here at the Jersey shore and in honor of it I’m going to share one of my favorite recipes, Scallop Cerviche. Enjoy!

* One thing to note, last week I discussed shortcomings from my sustainable kitchen and one big one that I forgot to mention was citrus fruits. What decent home cook worth their salt can go with out fresh limes, lemons, oranges, etc. So I’m guilty as charged on that note as well, but I figure better from Florida than California.
