How To Make Oysters Rockefeller (video)

Chef Ethan A. Powell, of Eat: An Oyster Bar, and The Parish, his new Portland, Oregon restaurant, shows us how to make Oysters Rockefeller.

Oysters Rockefeller Recipe

serves 4 people; 6-8 hot oysters each.

Ingredients:

  • Oysters Rockefeller
  • Garlic 2 tbls
  • Spinach 2 qts
  • Watercress 4 bunches
  • Green onions 1 cup
  • Butter 1 cup
  • Breadcrumbs .5 cup
  • Absinthe splash
  • lemon half
  • Hot sauce 1 tsp
  • Rock salt
  • Parmesan grated

Instructions:

  1. Puree or saute
  2. Puree : spinach; watercress; green onions; and garlic.
    Set aside.
  3. Puree butter; breadcrumbs; hot sauce; and absinthe,
    and fennel.
  4. Return spinach and puree together.
  5. Saute: Garlic in butter
  6. add green onions; spinach; watercress; fennel
  7. add absinthe; hot sauce; bread crumbs; spinach & parmesan; and lemon.
  8. Puree
