Oysters Rockefeller Recipe

serves 4 people; 6-8 hot oysters each.
Ingredients:
- Oysters Rockefeller
- Garlic 2 tbls
- Spinach 2 qts
- Watercress 4 bunches
- Green onions 1 cup
- Butter 1 cup
- Breadcrumbs .5 cup
- Absinthe splash
- lemon half
- Hot sauce 1 tsp
- Rock salt
- Parmesan grated
Instructions:
- Puree or saute
- Puree : spinach; watercress; green onions; and garlic.
Set aside. - Puree butter; breadcrumbs; hot sauce; and absinthe,
and fennel. - Return spinach and puree together.
- Saute: Garlic in butter
- add green onions; spinach; watercress; fennel
- add absinthe; hot sauce; bread crumbs; spinach & parmesan; and lemon.
- Puree
