From the documentary/how-to “BBQ Secrets: The Master Guide to Extraordinary Barbecue Cookin'”, Champion cook Mike Sarge Davis demonstrates how to prepare and barbecue a whole hog. There are things that he does in preparing his pig that even veteran competition BBQers have told us they had not seen done before. The one-hour documentary was released in 2005.
